One of my mom’s favorite cookie recipes is the cookie featured in a recent iStockPhoto shoot I did. My daughter loves these cookies and calls them “PJ Cookies” for Peggie James, my mother’s name. Unfortunately, my daughter never knew my mother, she died almost three years before my first child was born. This makes these cookies all the more special to my family. Here’s the recipe:
- 1 cup butter
- 1 cup brown sugar
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups flour
- 2 cups quick oats
- 2 cups Rice Krispies
- 1 cup shredded coconut
Preheat oven to 350 degrees.
Cream butter and sugars. Mix in eggs, vanilla, baking soda and salt. Then add remaining dry ingredients and mix thoroughly. Place heaping teaspoons full on an ungreased cookie sheet.
Bake at 350 for 12 minutes or until golden brown around edges.
