This is a yummy, healthy, and colorful salad that was fun to photograph. Actually, I was just adding the chopped ingredients into a bowl to make the salad with no intention to do a photo shoot. The multi-colored layers viewed through the glass mixing bowl were just too pretty not to grab my camera. Needless to say, one photo lead to another and it was quite a while until I actually got to eat!
Here is the recipe for this yummy vegetarian salad, courtesy of my friend Kim:
- 1 cup spring onions; sliced
- 1 1/2 cup frozen corn
- 2 cans of black beans
- 4-5 Roma tomatoes chopped
- 3 tablespoons picked Jalapenos
- 1/4 cup Cilantro; chopped
- juice of 2 limes
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
Drain and rinse the beans. Combine all ingredients in a bowl and toss. Serve chilled or at room temperature.
