Black Bean Salad

This is a yummy, healthy, and colorful salad that was fun to photograph.  Actually,  I was just adding the chopped ingredients into a bowl to make the salad with no intention to do a photo shoot.  The multi-colored layers viewed through the glass mixing bowl were just too pretty not to grab my camera.  Needless to say, one photo lead to another and it was quite a while until I actually got to eat!

Here is the recipe for this yummy vegetarian salad, courtesy of my friend Kim:

  • 1 cup spring onions; sliced
  • 1 1/2 cup frozen corn
  • 2 cans of black beans
  • 4-5 Roma tomatoes chopped
  • 3 tablespoons picked Jalapenos
  • 1/4 cup Cilantro; chopped
  • juice of 2 limes
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt

Drain and rinse the beans.  Combine all ingredients in a bowl and toss.  Serve chilled or at room temperature.

If you would like to purchase a photograph of this salad for your food blog or cookbook, either in progress or completed, you can find several in my portfolio on iStockPhoto:
